Why your restaurant should own its email list
The cheapest marketing channel a restaurant has is the one most restaurants don't have. Here's why that's a problem, and what to do about it in under five minutes a week.

Most Finnish restaurants spend a decent share of their revenue on Wolt commission, Instagram boosts, or printed flyers. The cheapest channel sits right under their nose: an email list of guests who already liked the food enough to come once. Most restaurants don’t have one.
Here’s the math. If your restaurant serves 60 covers a night and even ten percent of guests give you their email at checkout, that’s six new emails a night. Over a quiet month (20 service days) you’ve added 120 subscribers. Over a year, about 1,400. That’s a list every restaurant in Helsinki would kill for, built passively from guests who already chose you.
What’s the channel worth
A list of 1,400 engaged people, mailed once a month, gets you roughly:
- 30–40% open rate for hospitality emails (above the cross-industry average because the brand is one they actually visit)
- 3–5% click rate to a reservation or takeaway link
- 40–70 reservations or takeaway orders off a single send
If your average ticket is €40, one monthly email can drive €1,600 to €2,800 in incremental revenue, on a list that cost you zero to build. It’s the single highest-leverage thing a casual restaurant can do.
How to actually build it
Three rules:
- Capture at the receipt. Don’t ask for the email mid-meal, and don’t ask for it on the table card. The moment after the bill is paid is when the guest is happiest. One checkbox: “Email me about new menus, events, and quiet Tuesdays.”
- Don’t buy lists. Bought lists tank your sender reputation and your open rate. The people who chose to opt in are worth a hundred times more than the ones you scraped.
- Send once a month, max. New menu, holiday hours, a quiet-Tuesday offer. That’s enough. Restaurants that email weekly burn the list out in six months.
